We are up to an inch and a half of rain overnight so guess I won't have to water today. Yesterday made 9 casseroles for the freezer. Two chicken spaghetti, One tater tot casserole, two chicken tetrazzini, two chicken and corn bread dressing casseroles, and two ham and hash brown potato casseroles. They are all 8 X 8 inch casseroles perfect for 2 people for a day or two of eating. All I have to do is remember to take them out the night before and defrost for dinner the next day. Froze up bags of frozen asparagus in vacuum seal bags. Next I think I am going to freeze some asparagus and ham quiche in bags. Simply defrost and pour into a crust and bake for an almost instant meal. These type of meals where the prep is already done is so helpful to put a hot and healthy meal on the table when everyone is busy with gardening and such.

I canned 9 quarts of mustard greens yesterday and freezing asparagus today. Busy busy! My green peas are loaded with blooms.

I still don't have the garden planted. We had discussed how much to plant this year, as my grandma turns 100 in a couple weeks, and her care will become more intense when she starts declining. Regardless, with the prices of food right now, it still seemed prudent to plant stuff. Even with the limited intentions, I still havent been able to plant them out. Just realized it is only mid-May, so not as far behind as I thought I was. At this point it is looking like it will wait till next week, as I am with Grandma again this weekend.
We decided to mulch the garden bed aisles, to reduce outside work this summer. That has taken a lot of time to break down the cardboard and disperse the mulch.

I picked and canned my first jars of mustard greens from the garden last week. Picking lettuce, peas, spinach and lettuce, turnips.

Garden beds are done! That was soooo much work!
Weeding tomorrow. Checking the drip irrigation system, then the plants go in.

I am taking my second day off in a row. After a week log canathon my feet hurt! Anyway itis supposed to et 90 today. This morning I watered all the seedlings in the garden and am going to tinker in the house a bit. Tomorrow back to cleaning fruit out of the freezer.

Good morning! Well yesterday I picked the last of the gooseberries and today is a canning day. I even got all of them tipped and tailed. Chopped a couple bowls of onions for the freezer. I have so many dehydrated I am not going to dehydrate any of them this year but rather attempt to use up what I have.

Gosh its so HOT out! Being so hot so early is really wearing me out of summer already. My peppers and tomatoes like the heat though- the plants have gotten so tall in the past few days.

I had to pull all my onions from this summer and chop them ip. They were not storing as well as previous years. Gonna try my hand at fermenting them. Has anyone tried it before?

Supper tonight pork roast, oven roasted okra and baked sweet potatoes. Today I am shelling out the okrapods for seeds as they seem dry. I can't believe it is already November. Where the heck did October go ?
