Picked my first batch of elderberries yesterday of the season. Blueberries are winding down fast. Blackberries are loaded.

Green beans. Ugh. When do ya'll pick them? Because when I do they are stringy and tough. Is there a happy medium between yummy and yucky? They are either tiny little things or monsters.

Always best to pick green beans when they are young and tender, if able, for tenderness and best flavor. Happy picking!!! Best wishes for a good harvest this year and for your fall garden to produce in time to process. Once they produce beans, they need to be shelled (the hull gets tough). These are called shellies and they are good also. This way, snap some young green beans an add to the beans if you have some still, this will make the beans tastier. You will just lose the hull when allowing to bean and you will not have as much produce from your efforts. Locally, so much rain this year has rotted gardens in our area and a lot of gardens are producing later than normal.

I bought purple podded and Cherokee and scarlett runner beans. I have grown quite a few green bean varieties throughout the years. My parents and grandparents preferred Kentucky Wonders which was a running/pole bean. They had to be picked super young not to be tough and not to have strings. My mother in law preferred Contender or Blue Lake both bush beans. Again both had to be picked young to be tender and stringless. Let them go too long and you had a hot mess on your hands. I grow one variety of green bean and that is it! I prefer Jade green bush bean. They are a bush variety that produced heavily for me. They can rebloom in a good year and are open pollinated so I can save the seeds. Best of all they tend to produce long slender pods even if you let them go a bit longer than you should and the holy grail of all is that they are stringless. If you can find them give them a try.
