Got 10 quarts of sliced apples in a very light syrup. When I go back to work I will get another few boxes. Planning to use them as pancake topping, oatmeal topping, ice creams topping, etc. we dont eat much applesauce...
On a side note, that manual apple corer/peeler/slicer thingamabob from Rural King is awesome. Whipped right through the apples just fine.

One a newer one and one an older one that belonged to my husbands grandfather. Exact same design. I guess everything new is old again.

I am doing tomatoes yet again. After this batch I probably have 1 more batch on the bushes and that is it. Cannot wait to be done with tomatoes!

6 pints of pickled rosemary/garlic cherry tomatoes,. 8 pints of tomatillos. Last night I did chicken and chicken broth.

Paste tomatoes in the roaster and onions in the dehydrator. Shelling dried beans in between.

8 pints of ground beef. I think I need to pack it more tightly, as it was just 6 lbs of beef. I was just too concerned about overpacking and making it too dense. Also doing 4 quarts of beef chunks (roast). If I have energy tonight I will do up more pickled jalepenos or cowboy candy.

The pressure canner kept leaking out the rim; guess I didnt set the rim well enough (All-American). So TWO attempts later, I am calling it a night and will try again tomorrow. Those beef chunks better be worth it. They might be mush by the time they get processed correctly!

Tomatoes will not be around here much longer. October is the last month. I knew I was running out of time. Searched 7 locations for quart jars also and none to be found. Also no rings or lids. I managed to pull my stash and found old jars forgotten about (at the house where I grew up) and have enough to pull off an upcoming weekend of canning tomatoes, muscadine and scuppernong jelly. Also found some jalapenos and beautiful red and green bell peppers at a local farm, fresh from the patch also. Not sure if I will do stuffed jalapenos on the grill with the jalapenos and stuffed bell peppers over Labor day or just prep them for winter. So many ways to choose! Not enough jars to store as much as I wished for that way, although one must be creative! 🐝

Toodles I saw a survey on Facebook yesterday on people looking for jars seems that situation of no canning supplies is nationwide. Shaves are literally bare. While I do have some jars and lids I am doing lots of dehydrating to preserve jars and supplies. I wonder if we will be able to find some next year?

I think in a year or two there will be a surplus of canning supplies when people realize how much work it is and how little time there is with regular kids activities, etc.

You know my husband and I were just talking about that. I don't know how old you are but we have been through both the back to land movement of the 70's and the Y2K scare. After Y2K there were some GREAT yard sales and bargains that next year as everyone got rid of their Y2K junk. Of course we were waiting in the wings cash in hand because we lived that way all the time and found some great bargains. W shall see. I agree with you that when people realize how much work it is they won't stick with it.

We are in our late 40's. old enough to remember my parents praying about Y2K and what they were supposed to be prepping. 😊
Canning crushed tomatoes today. Going much faster than the last batch did.
