I am making hamburger dills with the cucumbers I picked this morning. After that, I need to make blackberry jam.
Anyone else canning today? I’d love to hear what you are making.

I canned a few quarts of Bread and Butter Pickles the other day. Even added a few squash and zucchini in with the cucumbers and onions. My squash and zucchini has produced yet but my neighbor shared a few of hers.

We are canning yellow squash, cubed, plain. We use it in one dish skillet meals and soups year round. I freeze mashed squash for use in casseroles and squash soup. I also serve mashed squash with onions, green onions and bacon sauteed in a pot then add the mashed squash salt pepper and garlic. Kind of like souped up mashed potatoes. Sprinkle a little cheese on top.

I came across a great deal on ground chuck ($2.46 a pound) so I seasoned it for tacos and canned 23 pints.

I’m about to get started on the blackberry jam. Next up will be more pickles. Busy time of year but I enjoy it.

For the first batch or two I made a semi-heavy syrup. Hubby likes them a bit on the sweet side. However, as with heavy syrup they often float. I don't like fruit that floats, so the next few batches I just did a very light syrup and some of those floated too. I always do hot pack because of the floating issue. I don't know what is causing it other than the peaches were super ripe. Any ideas?
