I just put up another 7 quarts of Louisiana Red Beans and 5 quarts of dehydrated onions with oxygen absorbers. I also put in mylar bags 4 quarts of corn flour that was in the freezer with oxygen absorbers.

I tried a new recipe last night for a pineapple jalapeno relish to use up the gobs of jalapenos we have and I was given two fresh pineapples. It was really quick and easy and it actually tastes more like a pineapple salsa (which is how I'll be eating it). Here is the recipe. It worked up really quickly and I think I would double it next time, as it only makes four pints.

Well I finally thawed the tomatoes to make crushed tomatoes, though by the time they thawed they were more like slimy tomato thingys. Lol. Got 14 of those pint and half jars and 2 regular pints. Tomorrow I hope to can up some apples and pears.

Canned 12 quarts and 3 pints of tomato sauce plus enough for a crockpot of taco soup for supper. Plus dehydrated and powdered about 2/3 pint of tomato powder. I am in love with that stuff!

What do you do with your tomato powder? I use it for adding to soups or ground beef meals. Works great with Mexican dishes. But it can also be used in place of tomato paste or sauce, depending on how much water you add.

I canned three pints of pickled cherry tomatoes with white wine vinegar and rosemary. Worth a shot. 😄

Tomato sauce cooking down. I love your tomato sauce recipe on your website! It is probably the easiest, most time efficient to put up tomatoes when I've got a ton of other things going on- (like Homeschool just started back up ugh)
