For those with fresh corn abundant, you may want to try.... I have and yum!
I grew peaches and cream corn and incorporated it, sure any fresh corn will work!
4 ears corn (cut off cob) 1 T. Olive oil approximately
Cook in iron skillet tossed on med.-high until caramelized-blackened (7-8 minutes approximate)
Next cool and add to bowl with optional below ingredients:
1/4-1/2 t. salt and pepper 1/4 t. curry powder 1/4 t. smoked paprika 1/4-1/2 t. garlic powder 2 T. lime juice 1 green or purple onion, (or any onion on hand) chopped 1 fresh pepper cubed or chopped, of choice 1 tomato (chopped with juice drained) 1 small can (or approximate size) black beans, drained shredded cheese 1 avocado chopped etc...
Let sit at room temp., after mixing, for approximately 30 minutes before serving!
Great with corn scoops or taco salads!
