What is your favorite way to "put up" Zucchini? I usually just slice and freeze for sautéed but I wanted to try something new.

I have made zucchini pickles in the past with Old Bay seasoned brine and another kind that had more of a sweet brine, but got away from that a few years ago because no one else ate them. I have also made canned 'pineapple' out of zucchini from the blog - recipe here - and a sweet and spicy zucchini relish - and salsa that has nutmeg in it that is really tasty! This zucchini jam uses jello and I've made a lot of different flavors, I think my favorite is raspberry. jackatessa.wordpress.com/2012/10/05/zucchini-jello-jam/But the past two years I have made zoodled zucchini pickles in a bread and butter brine and they are so good! They take 1/8 tsp of pickle crisp in the bottom of each jar and they are tasty. I would at least double it though because it doesn't make very many jars- like 2 1/2 pints. Recipe here- My dad used to shred it and freeze it in bags for later, but I have always found that too watery for what I use it for.

I saw that zuchinni can be used for a mock apple pie, or for applesauce!! We dont have any fruit trees yet, so I am hoping to try making those two recipes. Not sure how to can them though. The whole thing about "tested" recipes vs traditional canning recipes is still something I am trying to come to terms with.
That pineapple cipe looks amazing!!

I saw that zuchinni can be used for a mock apple pie, or for applesauce!! We dont have any fruit trees yet, so I am hoping to try making those two recipes. Not sure how to can them though. The whole thing about "tested" recipes vs traditional canning recipes is still something I am trying to come to terms with. That pineapple cipe looks amazing!! Do you have the recipes for the mock apple pie and applesauce? Sounds intriguing!

The pineapple zucchini is a safe recipe I got the original from the Universty of Missouri originally many many years ago. I do not have a zucchini apple pie recipe. But will admit I am intrigued. Might have to do a search or two and see what I can find.
