Anyone do this? Worth it? I planted a ton of green beans this year. And with my schedule this year, I am not putting much stock in being able to can them. Plus I hate greeen beans from a can. I do like them fresh.
I am trying to go more towards ferments.

I have canned pickled green beans just like pickled okra. My family loves them. I have fermented green beans not by themselves but with a vegetable mixture ferment and they were wonderful. My favorite is pickled ripe (red) sweet peppers. Salt, water and time.
