Realized I needed to use up my cut up turkey breast from Thanksgiving. I have not had Tetrazzini in awhile and it can be made with cooked chicken or turkey. It turned out very good and I began by boiling 1 pkg. Angel hair pasta for 6 minutes in boiling water, then drained off 3/4 of the lightly salted water from noodles. I did cheat and added 1 jar Alfredo white sauce to noodles and leftover water and 1 large can mushroom soup mix, 1/2 cup sour cream, 1 T. garlic powder, 1 T.+ black pepper and leftover turkey pieces.
I melted 3/4+ stick of butter in a 9"x13" baking pan and poured a little of this into my ingredients above and poured above mixture stirred, then over into pan. Preheat oven to 350 degrees and smooth down mixture evenly down into pan and cover with foil. Bake 45 minutes and take out of oven and remove foil (save this foil to reuse). Recipes call for parmesan cheese (I did not have and most cheeses work well, even cream cheese) so I used 6 slices of deli American white cheese and placed across the top of casserole. Next I sprinkled a few croutons, some panko lightly sprinkled over top and some dried onions, similar to French's. I left this all uncovered and added back to oven (without foil) and baked another 15-20 minutes, watching closely, once baked 15+ additional minutes to lightly brown the top crust. Remove from oven and cover with saved foil. Cool 30-45 minutes and cut into serving size portions. Good with a salad. Makes approximately 12 servings. Refrigerate leftovers. Even better next day.
(?) Could make a sauce from scratch by adding 8 oz. cream cheese, 1 cup sour cream garlic or sauteed onions and parmesan shredded. Also may want to sprinkle oregano, basil, parsley or paprika as an added herb, once baked, for flavor.
