Got yet more tomatoes in the dehydrator for tomato powder. And a few random cayennes and paprika peppers. Still staring at the sage in the garden that needs to come in.

My lemon balm has already started dying back with the flower heads all dried up. Honestly, I havent been in the garden for so long that there is probably a ton of stuff I forgot I need to dry. 😕 Here's to a cold winter so those darn bugs die die die.

Busy Day yesterday! Packaging Mylar bags all morning. 21 bags all with oxygen absorbers.
7 bags Louisiana red beans dried 1 pound per bag 2 bags Butter beans dried 1 pound per bag 1 bag peanut beans dried 1 quart dried beans 1.5 pounds 1 bag horticulture beans dried 1 quart 1.5 pounds 1 bag 1 quart chopped bell peppers dehydrated 1 bag 1 quart sliced okra dehydrated 1 bag 1 quart shredded potatoes dehydrated 2 bags mixed vegetables 1 quart dehydrated per bag (1 quart holds 5 pounds) 5 bags chopped onions dehydrated 1 quart per bag
I package beans in 1 pound because that is what I cook at a time for my husband and I. Everything else bagged in quarts because it is transferred one bag a time to a quart jar in the kitchen pantry as I need it. Two 5 gallon buckets with gamma lids of predominantly home grown long term food with more to be bagged. Still dehydrating and picking.

Finished the last of my tomato powder yesterday and washed the trays. Got ready to wash the blender and put hot water in it and turned it on. Then poured the hot water and tomato powder juice in a cup and drank it. OMG it was heavenly. I am considering mashing some cooked carrots and dehydrating and taking some of my dehydrated celery and making carrot and celery powder and adding to it. Instant V8 powder. Doesn't that sound handy and so good for you

I washed my dehydrator sheets today. And dried them in the dehydrator. Does that count for dehydrating? 😂 Also made yogurt and let it process in the dehydrator overnight.

I have a bag of Pinto beans soaking. I'll cook them in the pressure canner then put in the dehydrator. Oh are they handy when you need beans in a hurry!

Round one of celery in the dehydrator. Planning to powder the dehydrated leaves. Not sure if will keep the sliced celery whole or go ahead and powder it as well. DirtDiva's plan for a V8 concoction (tomato powder, celery powder, parsley) sounds intriguing. I do think I left the celery too long in the garden. Most of it was tough to slice. This being the first time I have ever grown it, I think I will try different timing next year.
