Today a ton of cherry tomatoes and tomato peelings. Tomorrow I hope to put yogurt starter in there.

Just sealed dehydrated onion in jars with Oxygen absorbers. 12 pounds dried red beans in mylar in 1 pound packs. 2 quarts dehydrated mushrooms in jars with oxygen absorbers. 1 quart mixed vegetables dehydrated. in the canner today 5 pounds corn and a couple trays of tomato peelings.

I am on a ministry trip, so my husband and youngest step-son tackled the remaining apples. Looks like it will be 4 dehydrator loads worth. It was nice to have someone else do the work this time.

I have started on the frozen veg I bought last week. There's a bag of mirepoix mix (finely chopped onion, carrot and celery) dehydrating as I type. I use this so much, both from the freezer and dehydrated. I did diced tomato last week, never again! Darn stuff welded to the sheets! Lesson learned, if (and it's a big IF) I ever do them again, I'll put it on parchemnt.

Anything tomato anymore I put on parchment just to not have to clean those sticky dehydrator trays. I am doing okra this morning in th deydrator and then probably more tomatoes. Then I have some elderberries I need to dehydrate. Still have onions too.

Finished dehydrating my paprika peppers today. I planted them exclusively to replenish my paprika powder. So today I ground them to a powder. They turned out a bright deep orange color instead of the deep red/maroon color you see in the stores. I wonder if the color changes when they irradiate the spices.

Tomato peels. Beautiful in a fruit jar! One quart down and drying more!!! Will be tackling powder soon. Canned since a child and first time to know how to dehydrate tomato peels, thanks for sharing inspirers!
