Has anyone froze flour to keep for longer? If so, when you thaw it out does it taste, bake the same?

Has anyone froze flour to keep for longer? If so, when you thaw it out does it taste, bake the same? My mom always kept her extra flour in the freezer. It works great, no effect to taste or usage. I used to do the same when we used flour. Now we grind wheat to make bread and don't buy flour.

I buy wheat berries and grind them in our vitamix dry container. What excess I grind up gets stored in a container in the freezer. We have never noticed a taste difference, and freezing it keeps it from going rancid. There is no need to thaw it out; it is still powdery straight from the freezer. Letting it sit for a couple minutes helps it come to room temperature. I let my bread maker do the kneading, and then bake in the oven. Go for it!

Has anyone froze flour to keep for longer? If so, when you thaw it out does it taste, bake the same? I like to freeze my flour to make sure there are no pantry bugs hatching out in the near future. I take it out of the freezer and let it come to room temperature and then put in my canister. I have not had a pantry bug in 20 years. ( Knock on wood ) It performs the same as not freezing it. I also freeze grits, rice, oatmeal, and cornmeal.

We are part of a co-op and buy flour in 50 lbs bags, several at a time. We usually have a bag or two in the freezer at any given moment. We've forgotten and left bags in the freezer for a year or more without any issues. If you have the freezer space, it's a wonderful way to keep it long-term.
