Hello all! I hope everyone is having a good day. I've got a question. I've grown black beans for about 3-4 years now and I just don't like how they turn out canned. They soak up all the water which leaves a very dry product. I can them according to the fresh beans in ball blue book. Even though they are fresh should I be soaking them? They are not picked when the pod is dry, they will even sprout some so they are very fresh. Also I started grown a small red bean this year, should I soak them then can as well?

I personally like to soak my beans first for that very reason.
