O. M. G. You guys... My grandma gave me a fermentation crock years ago, and up till now I have only ever done saurkraut. Well since the cucumbs decided to go into overdrive, I decided to follow the crock's recipe for fermented cucumbers. Thought I had ruined them because they are only supposed to brew for 10 days, the reservoir had gone dry a couple times, and it has been about a month or so in the crock. 😳😂 Anyway, I finally was able to get into the crock and see how they did. They didnt look bad, so my husband did the brave taste test, and then I did. Holy cow. Such a unique and yummy flavor. It was so nice to not have a regular dill or sweet pickle. Yay!

I will warn you fermented food is so addictive. We have cut down drastically on pickled food and increased our fermented items. I ferment both cucumbers and a vegetable mixture.

How do you store them long term? Our basement doesnt get cooler till mid to late fall. Do you have several refrigerators? Not to be nosy... 😎

No since is just me and my husband I designate the bottom shelf of my fridge as the ferment shelf. Right now I have 3 half gallons of kraut there. A half gallon of cucumbers and a 2 half gallons of vegetables.

When they are ready for cold storage, do you use plastic lids or what kind of lids?

I actually use canning lids that I have taken off canned goods and saved (used lids). For fermenting I have not had a problem with them at all.

We ferment pickles and try to have them year round in the fridge even if we have to buy cucumbers in the supermarket. We just enjoy the crunch so much better on the fermented food. Same with Kraut we do not can that anymore either but just keep large half gallon jars of kraut in the bottom of the fridge year round.
