I attempt to do a herb garden in terracotta clay pots each year. My best luck is always sage. I have planted sage in my yard with success also. It is easy to grow and dry naturally. I clip off the large leaves as it gets bushy and wash and dry on a paper towel. A brown paper bag works perfect to place the dried sage in to naturally dry the sage which is closed up in the bag and left in a dry area such as a sunroom, for about one week. Pick out the sticks or stems, once dry, then I roll my sage with clean hands in my palm until I break it down well and then I tear it into small pieces and bottle in a used empty sage container. Great to use in various dishes. My favorite way to use it is in homemade chicken and dressing or in a slow cooked boston pork butt and hush puppies also. It smells wonderfully when fresh picked and a lot of sage will come from one plant, if picked as it grows. Never over pick a sage plant, always leave the plant with 1/3 of the smaller growth behind on plant so it may produce more, for another harvest soon. Do not over water, is the trick, and sage loves sun but does best if not in direct sun all day.

I have never grown sage. I do grow basil, dill, mint, lemon balm, borage and catmint.

Great info! This is my first hear growing it, and it is on my list to go pick some for drying.

I have never grown sage. I do grow basil, dill, mint, lemon balm, borage and catmint. I planted basil, rosemary, thyme and fennel. No success once heat set in. Sage is still growing. I have had sage reappear in Spring when planted under a sunny but semi shaded porch and planted in the ground.
