11 quarts of peaches. We were gifted a full box of very ripe peaches. There were some we kept for fresh eating, the rest went in the canner. I tried canning with the peel on this time. I read about it in several places and found that the peel would dissolve during the canning process and make a beautiful red tinted juice. It did. We don't use sugar or sweeteners, only peaches and water. I'll let you know how they taste when we open the first jar. It is a peach of a gift! Very interested in this Fern I have never heard of such!

I did an internet search for canning peaches with skin because we had a comment on the blog a number of years ago that indicated it was doable. Here is something I found.
It is a wonderful gift!! We will enjoy them for some time to come.

Canned pickles for the first time today; 7 quarts of spears and slices. Made a batch of cucumber lime kombucha for a second ferment, and got another round of kombucha fermenting for the first ferment. Have beef broth and chicken broth simmering in the crock pots, and started thawing chuck roast for canning on Sunday (have never canned a roast before). Tomorrow is our day of rest.
Doing things for the first time always takes so much focus and concentration. Looking forward to the day when these projects are second nature, and don't require so much brain training. Today was the first day I haven't had to pull out the kombucha instructions before processing. That is encouraging!!

I've been canning 40+ years and I still have failures that leave me scratching my head wondering what went wrong. You will soon be able to memorize all the do's and don'ts, canning time and method for each food. However, I always check the Ball Blue Book each time just to make sure my memory serves me well, and to make sure no amendments or different instructions have been added to the recipes.
I have never made kombucha, but I sure would love to try it soon.

Today I will be canning more peaches and making pear preserves. Hubby went back to the fruit stand and bought another 20 something pounds of peaches. They are so big and nice. Juicy and sweet too. This time I think I will make spiced peaches and peach salsa. We got the pears free from someone that was giving them away at an antique store of all places. The owner of the store had a loaded pear tree behind his store and offered hubby a box full for free. That box of pears weigh about 43 lbs. It will definitely be a two day job for those.
Btw, my hubby found out the peaches he is buying are also being offered at HEB stores this week in Texas for ..77 cents a lb.if anyone is interested. The fruit stand bought the peaches from the same source. So far, he has bought close to 80 lbs. They have been a real hit with our kids and grandchildren. Hubby keeps threatening me that he is going to go get another 20 something pounds. He forgets I have pears and figs ready to process.

Well I have canned 3 quarts chicken broth, one quart beef broth, and 3 quarts of chuck roast.
How do you guys prefer to pack your beef? Raw or Hot? Which is fastest?

I did a new salsa recipe today, did a double batch and got 7 quarts ( and a small jar for the fridge), 6 quarts of a garlic dill in coins and one in small whole pickles, and then 3 pints of a Spiralized zucchini pickle. It’s more of a bread and butter pickle and is really good! I put pickle crisp in the bottom of each jar with the zucchini and I wonder if I could do that next time for the regular cucumber dills? Does it affect anything in the recipe to do that? I want to make sure they are nice and crisp.
Last weekend I did a batch of pickled beets and some sweet and spicy pickles in coins. Oh, and blackberry jelly!
